Laiterie La Chapelle - Cheese and cream dairy
In 2018, cheese lover Paul Zindy founded La Laiterie La Chapelle. In the heart of the 18th arrondissement, he set himself the challenge of designing his own local product references. Mature cheeses, yogurts, faisselles and creams. Driven by eco-responsible values, he packs his products in returnable glasses.
His team of cheese enthusiasts get down to the nitty-gritty of cheese-making. They create astonishing recipes such as beer and charcoal marbled cheddar, or turmeric and ginger yoghurt. Assemblies that never cease to amaze a loyal local clientele.
"Customers keep coming back to buy our cheeses, whether for the holidays, or to send to family members outside Paris."
But setting up a dairy in Paris remains a major challenge! Paul Zindy and his team had to perfect their know-how to find premises large enough for maturing, to collect raw milk outside Paris, and to think about handling and logistics.
They were faced with some complicated dilemmas, including eliminating plastic from the process and creating a delicatessen with products from outside the Paris region.
"Above all, it was an educational challenge! How do you set up a project like this in a neighborhood? And above all, how do you get local residents to enter La Laiterie?"
For the Laiterie la Chapelle team, the most important thing is to be as close as possible to its customers, with a social and inclusive approach. Thanks to these values, they have been awarded the Entreprise solidaire d'utilité sociale certification. A certification that values equal pay, parity and diversity, and exchange with the public by offering workshops at the dairy and in Paris schools.
To be awarded the Fabriqué à Paris label simply highlights an ancestral know-how that looks to the future, and whose uniqueness never ceases to delight their customers.
